The original disks on 5.1 were 360s, because it will run on an
8088 (that's why they keep (or kept) it in production. Most
schools seem to have a lot of old stuff around, including 8088s
and 286s. (Some of the schools in this state are finally giving
away their Apple IIs--and other schools are taking them!)
Schools don't have a lot of money, and won't usually discard
working equipment. The Apple IIs were probably retired because
they are used for instruction, and they can no longer get
software, or because they no longer have enough working machines
to fill a computer lab.
