When you get to Maui, stop in at any dive store and ask for their
version of the Maui Dive Guide. It will show most of the popular
dive sites. The best location I found in the Kihei area is south
of Kihei at a place called the Shark Caves (also known as 5 Graves,
from a small local cemetary on the access road). The entry point is
a public beach that is located in a Maui County Park, sorry, I can't
remember the name of the park, but check at a local dive shop.
The other good beach dives I like in Maui are at Airport Beach
and Olowalu Beach (mile 14 on the highway). These are on the north
side of Maui near Lahaina, but I think they are worth trying if
you have a car. Airport Beach is on the north side of Kaanapali,
about 45 minutes north of Kihei, and Olowalu Beach is a few miles
south of Lahaina, about 30 minutes north of Kihei. 
For boat charter dives, I prefer the sites on the south side of
Lanai, primarily "The Cathedrals". There are 2 and 3 tank dive trips
there, several dive shops do them, try Lahaina Divers as a starting
point but shop around for price. Hope you have some good dives!
