We once went to a Greek festival that ended up in the basement of an
Orthodox church, with music and ladies dishing out hot food for sale.
We saw Senator Sarbaine there (btw, recently died) with his wife. Also
in attendance was (then) Representative McClusky (later to become
Senator, and even later retired). The band played some sort of Greek
circle dance tune and Sarbaine and his wife practically pulled McClusky
to the floor to dance. That was as much fun to watch as the food.

Title: Banana Cream Pie

1 Almond Pie Crust -- See
-- No-Bake Peach Pie recipe
1/2 c Frozen white grape juice
-- concentrate
3 tb Agar flakes
2 10 1/2 oz pkgs lite silken
-- tofu, extra-firm
2 md Ripe bananas
1 tb Lemon juice
1/3 c Brown rice syrup
1 ts Vanilla extract
1 pn Cinnamon
1 pn Nutmeg
Bring fruit concentrate to a boil in a small sauce pan. Sprinkle in
the agar & reduce heat to low. Simmer & stir until thickened, about 3
minutes. Remove from heat & set aisde.
Blend tofu until smooth. Blend in the bananas & grape juice. Add
lemon juice, syrup & vanilla & blend until smooth. Pour into
prepared pie crust. Sprinkle with cinnamon & nutmeg. Refrigerate 4
hours or overnight before serving.
