 ML> Japanese curries have evolved
 ML> into something almost unrecognizable.

Transmogrified! A Japanese adaptation of a European riff on a South
Asian concept.

JW> Both hotels were running at under 50% capacity.

 ML> What's the breakeven occupancy?

About 60% occupancy. 70% is typical. Pre-Covid, Yellowknife was
hitting 100% in the winter, 80% in the summer, with an unknown but
substantial number of unlicensed Airbnbs and lots of people planning
on expanding or building. Right now the occupancy rate is about 20%.

JW> The yard is full of parked gravel trucks, loaders, dozers and so on

ML> So the economy is again on the upswing there.

No, the equipment is parked.

JW> Tourtiere a Mon Arriere Grand-Mere (Michel Boucher)

ML> A pinch of turmeric shouldn't make much difference,
ML> maybe add a tiny bit of a glow to the finished crust.

It's just enough to colour the crust, not change its taste to any
great degree. Jamaica patties have quite a lot more turmeric in
their dough wrappers.

Green tomatoes seem to be a thing in Asia too, even in frost free
tropical places.

2 ts Sesame oil or corn oil
      1 Onion, finely sliced
           Lengthways
      2 Cloves garlic, crushed
      1 ts Ground turmeric

1 c Torn spinach or other greens
      5 c Fish stock
           Salt to taste

Sour greens such as tender young tamarind weaves are used to make the
stock for this soup (or substitute green tomatoes).

Heat oil in a saucepan and when very hot fry the onion, garlic and
turmeric, stirring for 30 seconds. Add the tomatoes and spinach, stir
well, then add the stock or water and bring to the boil. Simmer
vegetables are tender. Taste and add salt as necessary. Serve with
  rice.
