DS> is how does one slice spare ribs into one inch pieces? With
DS> a hack saw? Or would one debone them first?

ML> A Chinese kitchen would probably use a cleaver,

I've used a hammer to crack large caribou ribs in half.

ML> Ribs are not deboned in any cuisine I can think of.

I've done that, again with caribou. The boneless strips were then
seared followed by stewing/braising.

DS > common in Chinese carry out S&S, is pineapple and red dye.

ML> Red dye, I've heard the explanation that red being an
ML> auspicious color, again the restaurants here started to overdo
 ML> it.

I've wondered if the red dye was a cheap way to suggest cherry
sauce. I've had cherry pork and chicken in places that used real
cherries and they were exceedingly delicious.

DS> field peas ... black eyed peas, which I discover are a
 DS> different thing.

 ML> Black-eyed peas are I believe a proper subset
 ML> of field peas.

Black eyed peas are a variety of cowpea while field peas are
dried mature common pea (split green and yellow peas, whole
marrowfat peas). Fresh garden peas are the immature version of one
variety of the latter.

ML> All the kinds of field pea I've run into are starchy, vegetal,
ML> and not on my list of favored foods.

Both the dried ones need lots of seasoning. Ethiopian kik alicha is
a wonderful example of how to make them taste pretty good.
