My friend Les and I are both competitive chilli cooks. And when allowed
(IOW - no Covid restrictions) meet for breakfast with several other of
our friends at one of the selections from rotating list of restaurants.
If we are going to be at a buffet venue either Les or I will bring a
styro container of chile verde (hotted up in the nuker before leaving
home) to spoon over the scrambled eggs/omelets. Really helps.

Title: Awesome Omelette
Categories: Pork, Cheese, Eggs, Vegetables, Chilies
Yield: 1 serving
4 lg Eggs
A few shots of hot sauce
1/2 Bell pepper; cored, in bits
1 md Onion; peeled, chopped
Oil
2 tb Butter
1/2 c Diced ham; or another meat
- in bits
1/2 c Cheddar cheese; grated
Mix all the ingredients in a bowl except the oil and
onions. Heat a pan at a little above medium heat and put
oil in it. Add the onions and once they’re browned add
the ingredients from the bowl. When the bottom of the
omelette is cooked, flip it over and cook the other
side.
Serve with freshly toasted, well-buttered bread.
