For safety's sake, it's better to use the device that comes with it for holding the food item than just using your fingers. The blades on these things are usually -very- sharp. Why it's called a mandolin I have no idea. I'm not even sure I spelled it correctly. The one I was using was a simple rectangle about 12 inches long by 6 inches wide and about a half inch thick. There's a half inch slot/opening across the width of it about 2/3 of the way down, and a blade above that slot. The blade is slightly adjustable, to allow for the desired thickness of the slices -- from paper thin to about a quarter inch. Simple yet clever device.
