I've had black bear but not grizzly or polar bear. It is a dark red
meat, stringy but tender if thoroughly slow cooked, closer to pork
than beef or venison in flavour. Spring and summer bear might be
lean but fall bears are especially fatty. There can have over six
inches of fat right under the skin and the meat is also well
marbled. For some reason raw bear fat can go rancid very quickly but
rendered bear lard is stable. Berry eating black bears have mild
tasting, sweet meat but fish eating brown bears are said to taste
fishy and smell awful when cooking although strong marinades may
make them edible.
