Steel cut pinhead oatmeal and old fashioned rolled oats are raw
grains and need 25-30 minutes of simmering in a pot on the stovetop.
You need 3-4 cups of water for each cup of oats. 25 minutes and 3
cups of water yields chewy oats; 4 cups of water and 30 minutes
or more makes for creamy soft oats.
Quick oats have been steamed and then dried so they only need to be
cooked 3-5 minutes. You need just 2 cups of water for each cup of
oats.
Instant oats only need to steep in boiling hot water for 1-2
minutes. 1 cup of water is enough for 1 cup of cereal.
I prefer pinhead oatmeal to the others; it's worth being patient
for it to cook! It has a chewy texture and a grainy, nutty taste.
