It takes a lot of boiling down. The sap runs around 1% sugar while
Manitoba and some other maples average 2% and sugar maples 3-5%.
Despite that, birch syrup is fairly common in Russia and the Nordic
and Baltic countries.

      Title: Belarusian Amber Drink
 Categories: Slavic, Wild, Beverages
      Yield: 4 Servings
 
      1 c  Birch sap
      3 c  Water
      4 tb Honey
    1/4 ts Citric acid
 
  Dissolve honey and citric acid in boiled hot water. Then cool and
  combine with birch sap.
