Truth, but the Costco XO made by Peyrat is a
distinctly mixing liquor despite its name and
its price, and the Port (port) is Six Grapes,
respectable but nothing to cry over spilled.

The one thing I cannot fathom is lamb with
mint. Rosemary, which is on the same end of
the spectrum, is better but still not my
favorite combination. (For me, garlic,
parsley, maybe lemon, and more garlic.)

A good brown version maybe, but most of them
seem to me to be more the 100 lb weakling
who just happen to know a couple of magic
spells and gets a reputation for causing
trouble.

For me, it's always adding richness and
brown notes, but then gelatin helps too, and
the chicken bones play the role where calves'
feet and such might once have served.

You probably knew that when you moved up there.
Sad to say, cheap, even reasonable, oysters are
a rarity now, except maybe on the Gulf coast,
where one risks Vibrio, Salmonella, and the just
plain not as good flavor that happens from warm
water.
