So I do this - but not with postfix, with sendmail.
(I've always used sendmail, never could understand postfix.)
So you should be able to do it.

I dont mess with ports, however, as I use docker containers, where each
container can listen on port 25, and then its just hostname resolution to get
the mail to the right container.
