Well, I've been happy with Cooper Radial GT tires, BF Goodrich Radial T/As
and Dayton Radial S/Rs.
The BFGs probably have the largest selection to choose from and are
reasonably priced. They also happen to be on my truck now. (Along with
Dayton snow tires)

Do you know anybody with a GM pickup truck (70-87) or Blazer/Jimmy
(fullsize variety, not the baby blazer and jimmy) See if you can borrow one
or two wheels for a test fit.
My Dad had a 1963 GM pickup (rotting away in my uncles barnyard now
unfortuneately) and from what I recall, theres enough room for a 15x7.
How about the tire shop? If they want to sell a set of tires, they may have
a (bent up) 15x7 laying around with a tire on it. And if they really want to
sell you a set of tires, they might have a GM pickup for parts chasing to
pull a wheel from for a test fit.
One thing to keep in mind, the truck rallys that are on Vans have less
offset (tire closer to the frame). You can spot these since they take a
narrow trim ring.

You should have no problem with a P235/75-15 tire fitting the wheel wells.
Preferably on a 15x7 wheel (So you can go to a p255-70-15 is you find theres
room to spare. They are not much wider than a 235/75-15.)
What is your overall tire diameter? I'll see what I can find for a similar
"modern" dimensioned tire. And go from there.
