AB> Where do I go for Keto cooking in Fidonet?

Hello, Alan. You're at the best place for 'keto' on Fido. And this ain't great.
I'd suggest grabbing what you can get of the original (AFAIK) keto diet - the
Atkins. It, and all the other serious plans of that ilk require healthy kidneys
and liver. So, I am not allowed by my croakers to follow it. But, before I
damaged my kidneys as a side effect of my diabetes I used it with some success.

AB> My wife and I need to start eating that way.

A word of caution - which I believe the introduction by Dr. Atkins does mention
- when you are into the diet and the ketosis the working - drink, drink, drink
until your teeth float. If you fail to stay well enough hydrated to let your
kidneys flush the ketones your mouth will think that Kim Jong Un's entire army
had marched through it with muddy boots.

And it does work - When I first went on it - along with my mother - I saw
weight losses of as much as five pounds in a day .... if I had been very
active. Even when I was playing the sluggard two to three pounds of lost lard
was not uncommon.

Here are a couple of nice recipes to get you started. More may be found by
plugging "atkins diet recipes" into your Bing search engine.

MMMMM----- Recipe via Meal-Master (tm) v8.06

Title: Lo-Carb Beef & Broccoli Stir Fry
 Categories: Beef, Vegetables, Sauces
      Yield: 2 Servings

3/4 lb Flank steak; in 1/4" strips
4 c Small broccoli florets; abt
           - 7 oz
    1/2 c Beef stock
      1 tb Corn starch
      1 tb Oil
      3 (to 4) Japone chilies *

MMMMM---------------------------SAUCE--------------------------------
    1/3 c Soy sauce
      3 tb (to 5) erythritol sweetener;
           - (see notes for options)

  * Added by UDD. Keep the chilies whole like for Kung
Pao Chicken. They heat things up nicely

Toss the sliced beef in a large bowl with corn starch
  until well-coated. Set aside.

Heat oil in a pan over medium heat for a few minutes or
  until hot.

Add sliced beef and chilies and cook until it browns,
less than 5 minutes, stirring frequently. Transfer to
  a plate and set aside.

Add broccoli florets to the pan and stir. Add beef
broth. Let simmer until the broccoli is tender, about 10
  minutes, stirring occasionally.

While waiting for the broccoli to cook, combine all
sauce ingredients in a sauce pan. Stir the ingredients
together over medium-low heat until it starts to simmer,
about 5 minutes. Keep the sauce warm over low heat as
you wait for the broccoli to cook.

Return beef to the pan and pour the sauce on top. Stir
until everything is coated with the sauce. Bring to a
simmer and cook for another few minutes.

Season with salt & pepper, if needed.

Serve immediately, optionally pairing with cooked
cauliflower rice. Drizzle sauce on top.

NUTRITION NOTES: This recipe yields 11.5 g net carbs per
serving. Nutrition numbers do not include rice, and
assume erythritol is used as the sweetener, which
cannot be digested by the body.

UDD NOTE: I am not doing Atkins or Keto so I serve
this over plain fried rice. If you don't go overboard
with the rice it's still a fairly lo-carb meal.

MMMMM----- Recipe via Meal-Master (tm) v8.06

Title: Korean Barbecued Meatballs (Atkins Diet)
 Categories: Meatballs, Beef, Vegetables, Appetisers
      Yield: 20 Meatballs

      1 lb Lean ground beef
    1/3 c Minced green onions; (I used
           - bell pepper)
    1/4 c Chopped onion
      3 tb Soy sauce
      2 tb Sesame seeds; toasted
      1 tb Splenda or equivalent
      1 ts Oil

Combine beef, onion, soy sauce, sesame seeds, Splenda and
oil in a medium bowl. Shape meat mixture into 1" balls.

Transfer to a jelly roll pan; cover and refrigerate for an
hour. (Instead of the above, I browned the balls lightly
in a skillet and then put them in a 9" X 9" glass pan,
poured the BBQ sauce which I had made first, over the
meatballs, and let them marinade in the fridge for most of
the day. I then baked them, covered all but the last 10
minutes, for 45 min at 350+.F/175+.C. They're wonderful and
would be great for company too if you made more of them.

Soak 20 wooden skewers in water for 30 minutes. Prepare
grill or preheat broiler. Thread 2 meatballs on each
skewer, then grill over medium coals for 5 to 6 minutes
per side or until meatballs are cooked through.

  Serve immediately.

  Makes: Approx 20 appetizers
