      Title: Chocolate-lemon bars

  1 1/2 c  All purpose flour
    1/2 c  Powdered sugar
    1/4 c  Unsweetened cocoa powder
    1/4 ts Salt
      1 c  Butter or margarine;
           - cut in small pieces
MMMMM-----------------------LEMON TOPPING----------------------------
      4 lg Eggs
      2 c  Sugar
    1/3 c  All purpose flour
      1 tb Fresh grated lemon peel
    1/2 c  Fresh lemon juice
           Powdered sugar
 
  Heat oven to 350~. Line a 13x9" baking pan with foil, letting ends
  extend above both ends of pan. Grease foil.
  
  CRUST: In a food processor, process flour, sugar, cocoa and salt until
  blended. With machine running, gradually add butter and process until
  mixture clumps and leaves side of bowl. Press dough evenly over
  bottom of prepared pan. Bake 20 minutes, until crust looks dry on
  top. Remove pan to wire rack to cool. TOPPING: While crust cools,
  whisk eggs in a large bowl until blended. Whisk in remaining topping
  ingredients until very well blended. Pour over cooled crust. Bake 25
  minutes, or until toping is set and lightly browned around edges.
  Cool in pan on wire rack. Holding foil, lift to cutting board. Dust
  with confectioners' sugar before cutting in bars.

      Title: Zucchini-lemon muffins

      Yield: 12 Servings
 
      2 c  All-purpose flour
    1/2 c  Sugar
      1 tb Baking powder
      2 ts Grated lemon rind
    1/4 ts Salt
    1/4 ts Ground nutmeg
      1 c  Coarsely shredded zucchini
    3/4 c  Skim milk
      3 tb Vegetable oil
      1    Egg
           Vegetable cooking spray
 
  Recipe by: Cooking Light YEAR: 1995 ISSUE: June Combine the first 6
  ingredients in a bowl, and make a well in center of mixture. Combine
  zucchini, milk, oil, and egg; stir well. Add to flour mixture,
  stirring just until dry ingredients are moistened. Divide batter
  evenly among 12 muffin cups coated with cooking spray. Bake at 400
  degrees for 20 minutes or until golden. Remove from pans immediately,
  and let cool on a wire rack. Yield: 1 dozen (serving size: 1 muffin).
