Title: Bear Stew with Savory Balls

Yield: 4 Servings
1/2 lb Lean bear meat
1 tb Drippings
1 Onion
1 tb Vinegar
1 tb Flour
1/2 ts Salt
1/4 ts Pepper
1 qt Cold water
SAVORY BALLS:
2 c Flour
3 Sprigs parsley chopped fine
1 ts Baking powder
4 tb Suet, cut finely
1/4 ts Pepper
1 ts Salt
1 sm Onion, chopped fine
1/2 ts Sweet herbs, powdered
Heat drippings in a very hot cast iron frying pan. Peel and slice
onion, then brown it in the drippings. Shake in the flour and brown
it also. Add the water, vinegar, salt and pepper and the meat.
Simmer for 2 hours. After it has simmered for 1 hour
Prepare the savory balls: Mix all these together, make a stiff dough
with cold water. Divide into 12 balls, roll each lightly in flour
and drop them into the stew. They will take 3/4 hour to cook and may
be served on a separate dish as you would potatoes.
