Manny's Liver and Bacon

Serves: 4
2 lb beef liver
2 c milk
1/2 lb bacon, sliced
2 lg onions, sliced
1/4 c mushrooms, sliced
2 Tb oil
2 c flour
salt to taste
1 ts pepper, freshly ground
1/2 c water
1 Tb flour
1 ts beef bouillon granules
1/2 ts basil
1/4 ts thyme
Slice the liver and soak covered in milk overnight
in the refrigerator. Fry bacon, onions and mushrooms
in the oil and set aside. Mix 2 c flour with the
pepper and salt and dredge the liver slices. Fry
in the bacon drippings until slightly pink in the
middle. Remove liver and set aside. Mix 1/2 c cold
water with 1 Tb flour, add beef bouillon granules,
and stir until lumps are eliminated. Pour into
skillet on low heat, scraping up the drippings and
add basil and thyme. Up heat to medium and stir to
thicken gravy. Add liver, bacon and onions and
simmer 15 to 20 min.
