Title: Sopa Ranchera

Yield: 4 Servings
1/4 c Chopped onion
1 tb Cooking oil
4 c Chicken broth
1/4 c Long grain rice
1/4 c Tomato paste
1/4 ts Salt
ds Pepper
1 c Frozen peas
Heat the oil in a saucepan and add the chopped onion. Saute until
translucent, but do not allow to brown. Pour the chicken broth into
the saucepan, then add the rice, tomato paste, salt and pepper. Turn
the heat up to high and bring to a boil. Lower the heat and then
cover and simmer for about 25 minutes. Add the frozen peas and then
bring to a simmer again and cook on low for about 5 minutes.
