So far the Yukon has only 2 confirmed cases, the NWT 1 and Nunavut
none. We are more concerned about the small communities that only
have a nursing station or nothing at all, even though Yellowknife
has far more southern and international visitors because we have a
pretty solid health care infrastructure in place.

That IS a good way to do a roast. I followed those guidelines with my
old oven but my current one isn't as well insulated so I don't turn
it off, just reduce it to its lowest setting which is 175 F.

The CBC North Facebook Group called The Arctic Kitchen: Recipes of
the North has really taken off. We're up to 8200 members and
attracting new ones from all over and seeing a lot of modern Native
fusion dishes using "country food" in new ways like Curry Arctic
White Fish Tacos by Sadiiraq "Sadie" Young of Barrow, Alaska.

This one caused a bit of controversy until the author explained
that Tundra swans (Whistling swans) are common, not endangered, and
not the same as the once endangered and still protected Trumpeter swan
and also that Nunavut Inuit are exempt from normal hunting
restrictions. The crappy stuffing speaks to how remote Kugluktuk is
and what's available in the local general store that gets one
sealift of nonperishable groceries per year and then must rely on
expensive air freight for perishables.

      1    tundra swan, dressed out
           STUFFING:
      1 pk stove top stuffing plus 
      2 c  cooked rice, 
      1 c  frozen mixed vegetables and
           lots of garlic added in
           butter for basting

Cooked it for 4 hours on 350.
