Title: Orange Salmon Steaks

Yield: 6 Servings
6 Fresh Salmon Steaks-(1 inch
Thick)
1/8 ts Pepper
1 Orange
1/2 ts Salt
1 tb Butter
Orange Slices -- for
Garnish
Season steaks with salt and pepper. Blend juice of 1/2 orange with
butter. Cut remaining 1/2 in thin slices. Brush steaks with 1/2 of
the orange butter. Set them on a greased grill, 3-4 inches from heat.
Cook 5 minutes, until steak is brown. Turn, brush with remaining
orange butter and broil 5 minutes more or until fish flakes easily
when tested with a fork. Garnish with orange slices. Serves 6.

Title: Salmon Steak Bake

Yield: 4 Servings
2 pk Frozen salmon steaks(12oz)
1/8 ts Ground pepper
1/2 c Dry red wine
2 tb Lemon juice
1/2 ts Cornstarch
1 ts Salt
1 tb Butter or margarine,melted
1/4 c Finely chopped onion
1 tb Water,cold
1/2 c Seedless green grapes
Heat oven to 475'. Place frozen salmon steaks in buttered baking dish,
12x8x2 inches. Sprinkle with salt and pepper; brush with melted
butter. Bake uncovered 15 minutes.
While steaks are baking, heat wine, onion and lemon juice to boiling
in 1 1/2-quart saucepan; reduce heat. Simmer uncovered 5 minutes.
Stir water into cornstarch; stir into wine sauce. Heat to boiling.
Boil and stir 1 minute. Stir in grapes. Spoon sauce over salmon. Bake
uncovered 5 minutes.
