Jamacian Rice & Peas

What you need: (as a side dish)

2 cups UnCooked Rice
1 19oz can Red Kidney Beans (reserve the liquid)
3 or 4 Cloves of Garlic
Small Onion
Hot Sauce
Soya Sauce
Oyster flavored Sauce
Salt
Pepper
Water
Cooking Oil
Optional Stuff: (a main dish)

2 Chicken Breasts

What to do

In a medium cooking pot measure a small amount of cooking oil.
Chop the onion & garlic and cook until tender.
Measure the resevered liquid from the beans and add enough
water to equal 4 cups. Pour this into the pot. Next add the
rice, 1/2 tsp salt, pepper, soya sauce, hot sauce & oyster sauce
seasoning to taste. Add the kidney beans stirring all ingredients
together.
Cover and simmer over medium low heat for about 20 min or until
most of the liquid has been absorbed.
Remove from heat, stir, re-cover and let sit for about 5 min so
that the last of the liquid is absorbed into the rice.
To make this a complete main dish just add the chicken, and peppers.
While the rice & beans are simmering.
Cut the chicken breast and the red & green pepper additional onions
and garlic into bite size pieces.
In a medium frypan cook the onion, garlic and peppers until tender.
Add the chicken pieces additional spices & sauces as about to suit
your taste buds. Cooking until chicken is completely cooked.
Combine the rice and chicken mixtures and serve.
This will serve 3 or 4 people as a main dish or 6 to 8 as a side dish.
