Started doing something like this for the holidays a few years back (just eat
the bacon itself though, haven't tried it with ice cream)
I cook the bacon light in a frying pan and then coat in a mixture of mostly
brown sugar and cayenne pepper. Finish it in the oven, let it cool and drain
for a few minutes, sprinkle some more brown sugar and hit it with a blow
torch until the sugar caramelizes.
The cayenne and sugar just really complement the flavor of the bacon.
