Not everything has to be explained. The Guardian obviously has some
type of intelligence even if only a computer-type intelligence otherwise
it couldn't have a conversation with Kirk.
The Guardian did show key points. I don't recall seeing anyone drinking
coffee and reading the newspaper. The Guardian showed key scenes from
history from whatever archival footage Desilu could come up with.
It is impossible to step through at the time they wish because the
images are going by so fast. Spock specifically states this. Once McCoy
goes through to the past, the Guardian knows what was changed
(people/Guardian on the planet know that things were changed but do not
cease to exist as they would if they weren't there) and can send Kirk
and Spock to the same place and approximately same time. Maybe the
Guardian is a race of beings/group of computers that like to play games
with space travellers (like Trelane).
