Title: BLACK BEAN GAZPACHO

2 c Black beans
2 qt ;water
2 c Onion; chopped
1/2 c Celery; chopped
1/2 c Carrots; chopped
1 ts Salt

Egg; hard-boiled sliced
Onion; minced
Bell pepper, green; diced
Lemon; slices
Pepper, red; diced
Tomato pulp
Croutons
Bacon; crumbled

Fat grams per serving: 1 Approx. Cook Time: 3:30
Pick over and wash beans. Bring to a boil for two minutes; cover and
set aside one hour. Add onion, celery and carrots; simmer slowly for
2 hours. Purée with liquid. Bring soup to a simmer and taste for
seasoning, adding chicken stock or water if too thick. Serve in wide
bowls and pass garnishes separately.

2 c Vegetable Stock
2 c Tomato juice
2 T Lemon juice
2 T Green taco sauce
1 ts Sugar
1/2 ts Garlic salt
1/8 ts Pepper
1 Cucumber; peeled, seeded &
-coarsely chopped
1 Green pepper; seeded/diced
4 lg Tomato; peeled & coarsely
-chopped
3 Scallion; green & white,
-thinly sliced
In a 3-quart pan over medium heat, combine stock, tomato juice, lemon
juice, taco sauce, sugar, garlic salt, and pepper. Leave uncovered
and bring to a boil. Stir in cucumber, green pepper, tomatoes, and
onion; bring mixture, uncovered to a boil again. Remove from heat
and cool. Cover and refrigerate until well chilled. Serving size: 1
cup
Per serving: 3 grams protein, 14 grams carbohydrates, no cholesterol,
64 calories.
An easy make-ahead soup to begin a meal with.
