Title: AL'S MARYLAND CRAB SOUP

3 qt ;water, cold
1/2 lb Slab bacon; cut into 2
-pieces
1/2 lb Ham chunks (or you can use
-a ham bone)
1 T Red pepper flakes; (opt)
1 T Old Bay seasoning
1 ds Celery salt
1 ds Onion salt

3 lg Potato; diced
16 oz Tomato; chopped; with juice
1 Onion; diced
16 oz Frozen mixed vegetables
2 Celery rib; diced
1 c Parsley, fresh; chopped
16 oz Crab meat; picked over
1 T Worcestshire sauce
1 T Red pepper flakes; (opt)
1 T Old Bay seasoning
Salt & pepper; to taste
1 c Cabbage leaves; shredded
Simmer ham-bacon stock for about one hour. Add remaining ingredients;
simmer for about two hours - the longer it simmers, the better the
flavor. Refrigerate immediately.

Title: BAY COUNTRY CRAB SOUP

1 lb Beef shin, bone in
3 qt ;Water
1 lg Onion; chopped
2 lg Celery rib; chopped
16 oz Tomato, canned
1 T Salt
1/4 ts Pepper, black
1/8 ts Cayenne
10 oz Frozen mixed vegetables
1 lb Maryland lump crab meat
1/2 lb Maryland claw crab meat
Put the first eight ingredients in a large pan and simmer, covered,
until meat is very tender, about three hours. Add the rest of the
ingredients and simmer, covered, until the vegetables are done.
