Because many orchids are epiphytes (air rooters) and they are meant
to get their fertilizer from constantly decaying insects and plant
detritus in the nooks and crannies of their tree homes.
When you grow them in plain bark, or worse, on sterile nylon bits,
these orchids need every nutrient, and not just nitrogen, supplied on
a regular basis. They get NOTHING from most tap water and sterile
potting mediums.
However, I use mine also for houseplants that are strictly
ornamental, but I alternate with fish fertilizer for herbs and
edibles. (I hate chemical fertilizers! :-( )
