      Title: Chicken Saute Au Parmesan^
 Categories: Crs97, Poultry
      Yield: 4 Servings
 
  2 1/2 lb To 3 chicken, cut into
           Serving pieces
           Salt
           Pepper
  4 1/2 tb Butter
  1 1/2 tb Flour
    3/4 c  Milk
    1/4 c  Heavy cream
    1/4 ts Nutmeg
    1/2 c  Shredded Swiss or Gruyere
           Cheese
      2 tb Bread crumbs
 
  Season chicken with salt and pepper and brown in 3 tablespoons butter.
  
  Preheat oven to 350F.
  
  Melt remaining butter and stir in flour. Add milk and cream, cook
  until thickened and smooth. Remove from heat, stir in nutmeg and
  shredded cheese.
  
  Sprinkle half the Parmesan in bottom of baking dish; arrange chicken.
  Spoon sauce over chicken, sprinkle with remaining Parmesan and bread
  crumbs. Bake 20-30 minutes, until golden brown.
