servings: 30
300 g butter
6 eggs
320 g sugar
40 g honey
1 lime, zest of, minced fine
2 vanilla beans, seeds of
200 g flour
9 g baking powder
100 g almond flour
1 Tb butter or as needed
Melt the butter and cook until it browns and is aromatic.
Let cool to room temp.
Beat the eggs with the sugar, honey, lime zest, and vanilla
until the mixture is light and fluffy.
Add the flour, baking powder, and almond flour; mix well
and refrigerate at least 24 hr.
Coat madeleine molds with butter. Fill them with the
batter. Bake at 180C/350F for 10 min or until brown.
Cool, unmold, and serve.
