      Title: BUDDHA'S DELIGHT
 Categories: Vegetables, Chinese
      Yield: 4 servings
      6    Black mushrooms, dried
     16    Tiger lily buds, dried
      2 T  Tree ear mushrooms
      2 oz Tofu, dried
      2 oz Glass noodles
      3    Tofu cakes, fresh
           ;Water, boiling
    1/4 lb Snow peas
      1    Onion
      3 T  Oil
      1 c  Celery cabbage; cut across
           -the rib in 2" pieces
    1/2 c  Bamboo shoots; shredded
     20    Ginkgo nuts, canned
    1/2 ts Salt
  1 1/2 c  ;Water
      2 ts Chinese sesame oil
  Soak the dried black mushrooms in warm water for 30 minutes.  Squeeze
  dry.  Remove the hard stems. Cut the large mushrooms in half.
  Soak the lily buds and tree ears for 30 minutes. in warm water.  Cut off
  the hard ends of the lily buds and cut the buds in half.  Cut out any
  hard parts of the tree ear mushrooms. Pull the "ears" apart.
  Break up the dried tofu into a few pieces. Boil for 20 minutes and
  drain. Cut in strips one inch wide and two inches long.
  Cover cellophane noodles with boiling water and soak for 20 minutes.
  Cut into four-inch lengths.
  Cut the fresh tofu into one-inch cubes and deep fry.
  Cook hair seaweed in boiling water for three minutes.  Drain and wash
  thoroughly in cold water.
  Remove stem ends from Snow Peas. Cut in slivers.
  Shred onion.
  Heat three tablespoons of oil in a wok. Stir fry the celery cabbage
  for one minute.  Add the onion and fry one minute.
  Add the fried bean curd, bamboo shoots, ginkgo nuts and the drained,
  soaked ingredients. Stir until heated.
  Add soy sauce, salt, honey and water. Heat to boiling.
  Add snow peas and stir until they turn a bright green.  Taste for
  seasoning and add more soy sauce or salt if desired.
  Flavor with Chinese sesame oil, just before serving.
  This exotic meal-in-one will keep up to a week, refrigerated. It may
  be reheated several times without harming its delicate flavor.
  Although the Buddhist dish traditionally requires 10 to 12 major
  ingredients, it can be prepared with fewer.  For the most authentic
  taste, use as may ingredients as you can possibly obtain.
  One teaspoon or more of bean curd cheese may be added when simmering
  the ingredients.
  HAIR SEAWEED (Faht Choy)
  Hair seaweed is found mainly in vegetarian recipes of Buddhist origin.
  When dry it has the appearance of thick black hair. To Prepare hair
  seaweed, boil it for three min., then drain and wash it thoroughly in
  cold water. Gently squeeze out the excess water.  Hair seaweed is
  expensive, but it's rich in minerals.
