Rosh Hashanah is the Jewish New Year, a High Holy Day filled with
happiness and families gathering to wish one another health and
fortune. It's a time for feasting and using sweet foods to symbolize
a "sweet year" to come. Rosh Hashanah is always in September or
October, when apples and dates are harvested, and there is ample
honey from bees. So why not use them in bagels that will start
breakfasts and days of the new year off right?
