I would tend to work with Win95 out of these - it _seems_ to have one of the better TCP implementations and, as I've now found out, supports both a dial-up and ethernet connection simultaneously (and they co-exist fairly well - note that, so far, I'm not using this as a gateway, just keeping the LAN going while my Win95 machine is on a PPP).
