Title: Passover Matzo Bagels with Honey Glaze

1/2 c Vegetable oil
1 1/2 c Water
1 ts Salt
1 ts Sugar
2 1/2 c Matzo meal
4 Eggs

1/2 c Water
1/4 c Honey
1/2 c Sugar
1/4 ts Caiinamon
2 tb Vegetable oil or margarine
1/2 c Finely chopped nuts

*Or five minutes before the end of the kneading phase, or work into
dough.
Passover breads must be "unleavened" or made without yeast. they won't
taste like yeast bagels, but they are so incredibly delicious you may
want to make them all year round. Don't make these in your bread
machine. Use a food processor, electric mixer or an egg beater. This
recipe makes about 14 bagels.
Bagels:
Place oil, water, salt and sugar in a 1 1/2 quart saucepan and bring
to a full rollling boil. Remove from heat. Add matzo meal all at
once; beat until smooth and well blended. Coat hands with oil; break
off pieces of dough aobut the size of an egg. Shape into bagels,
place on a well-greased baking sheet and bake in a preheated 350F.
oven for 50-60 minutes. About 15 minutes before end of baking time,
spoon glaze over each bagel. Remove bagels from oven when done and
sprinkle with chopped nuts.
Honey Glaze:
Combine water, honey, sugar and cinnamon in a small saucepan and
bring to a boil over medium heat. Boil for 2 minutes, stirring
constantly. Add oil or margarine. Cool.
