The black bugs are some sort of worm that is real small.  They will 
strip the foilage of the fern like leaves and leave the stalks. That is 
the stalks that you didn't harvest due to size and has grown up to 
produce the flowers and seed that later develops.  I don't know about 
your location, but around here in the piedmont section of North 
Carolina, you can walk the railroad tracks and harvest asparagus that 
grows wild for some reason along the edges of the tracks.  I guess the 
railraod sprays the right of way to keep out the weeds, but the 
asparagus loves railroad tracks for some reason. In case you try 
growing asparagus, you can spray it with sevin to control the lil black 
creepy things.  Good Luck!
