Hi Mark,
  Could be you're referring to CakeWalk...very good program. There are
also programs like Noteworthy Composer (if you read music or at least
can copy it) that let you write musical notation and then makes a MIDI
file of it...you could do your melodies with it or the entire song for
that matter...hope this helps. Bye.
