1 tb Vegetable oil
1 tb Malt syrup or honey
3/4 ts Salt
1 tb Dried onion flakes
3/4 tb Instant coffee crystals or
Unsweetened cocoa powder
1/4 c Rye flour
3/4 c Whole wheat flour
1 1/2 c Bread flour
2 ts Vital gluten, optional
1 1/2 ts Active dry yeast

1 tb Vegetable oil
2 tb Malt syrup or honey
1 1/4 ts Salt
1 1/2 tb Dried onion flakes
1 tb Instant coffee crystals or
Unsweetened coffee powder
1/2 c Rye flour
1 c Whole wheat flour
2 c Bread flour
1 tb Vital gluten, optional
2 1/2 ts Active dry yeast
Onions with rye and whole wheat have an entirely different flavor than
onions in a rye dough only. Top bagels with onions, or combine salt,
onion flakes, garlic flakes and seeds to make the "Everything Bagel",
a mainstay in many bagel bakeries.
VARIATION: "EVERYTHING BAGEL" Coarse salt or kosher salt, onion
flakes, galric
flakes and seeds are mixed to top a whole wheat or white bagel. (see
