Linux successfully reads both NTFS v4 and v5 - all you need is a spare
partition where to put the extracted data. Then run a "repair"
install on top of the old OS and it should be bootable and usable.

There are also commercial tools that can perform the conversion in a couple
of mouseclicks.

With a good fdisk replacement :) I think Symantec have a freeware tool
called gdisk that can operate on any partition type. Also all the linuxish
tools (sfdisk for example) and the commercial products ... I cant really
remember when i used fdisk the last time - it simply suxx :)
