I only did carrots last year.  I didn't do anything special, just put them in 
the end of the garden with the "good" humus soil and mixed in lots of 
mpost.
I scattered a packet of seeds on the ground and raked in across the soil.  At 
first it seemed like the weeds would take over, but the carrots reigned 
supreme!
At the end of the year, I had a double laundry tub full of carrots!  A few 
hour of cleaning/slicing/blanching/freezing and I've had carrots all winter 
long.  Next time I think I'll just leave them in the ground and cover with 
hay.
