Thanks to everyone for the suggestions, which gave me a starting point. 
Meanwhile here at work I have my shell scripting book... between all the
suggestions and the book, blabla, the below does exactly what I wanted:

echo on
:rePing
time /T >> c:\Test.txt
ping 10.10.10.10 >> c:\Test.txt
goto rePing

Gonna schedule it to start at 6:00 a.m. tomorrow, this should be interesting.
