Chicken Cacciatore

1 Tb olive oil
2 lb boneless, skinless chicken breasts, thin strips
1 red pepper, halved, seeded and sliced
1 green pepper, halved, seeded and sliced
1 md onion, peeled and sliced
1 lb fresh mushrooms, sliced
1 c diced tomatoes, fresh or canned
3 cloves garlic, peeled and minced
2 ts tomato paste
1/4 c dry white wine
1 ts dried basil, or 3 or 4 fresh leaves
salt and pepper to taste
Heat oil over a med-high setting in a large nonstick
skillet. Add chicken strips and saute on both sides
for a total of 6 min. Remove chicken from skillet and
set aside. Add peppers, onion, mushrooms, tomatoes and
garlic to skillet. Saute for 5 min, until peppers
start to soften. Return chicken to skillet. Add tomato
paste, wine, basil and seasonings. Cover, lower the
heat and simmer for 25 min.
