Gratified, of course. The April fool joke was to do it on both sides of the
Atlantic on the same day. Both Dave & I very much liked the look of the
recipe.

Yes, we did. I think it's fair to say that the results were moderate. We both
found that the texture left something to be desired, but I felt this might
have been due to the cooking method we chose to use. We poached them in stock
and then fried lightly in clarified butter. We had both made up a patty of
the mixture to check the seasoning, and both independently felt that the
patty was juicier and nicer than the sausages themselves. We both found that
the sausages were quite expensive, but I think I was more inclined to try
them again, perhaps only cooking them once. The recipe didn't specify (not
criticising, by the way) the cooking method or time. We couldn't eat all the
sausages on one occasion, so we froze them and the other day, used them up.
We cut them (after thawing) into thick chunks which we fried crispy and
cooled before using them as part of an aioli, and they were stunning like
that.
