Hello John!
This is is a recipe for a french style Colombo, and although it can be made
with Goat, if you don't have any, you can make it with any meat.

Yield: 6 servings
2 lb Meat (any)
Salt
Garlic
Onion; sliced
Lemon juice
Pepper
2 tb Colombo powder (1)
1 ts Cumin, whole
1 ts Fenugreek, whole
1 ts Mustard, whole
2 Aubergines
Water
Parsley
Thyme
1 Stock cube
1 tb Colombo powder (2)
1 Lemon; juice of
3 Garlic cloves
Cut the meat into serving pieces, add salt, garlic, sliced onion,
lemon pepper, the first portion of colombo powder and leave in the
refrigerator to marinate 1 hour at least. (May be done the day before)
Heat a pan with some oil, and add the three whole spices, let them
pop, without burning. Add the meat mixture and stir over high heat,
to seize it. Cover with water, add the aubergines cut into cubes and
a bouquet garni of parsley and thyme. When the meat is tender, add
the remaining ingredients and allow to simmer 5 mins before serving
with white rice.
