NEVER try to heat glass jars by filling the cold jar with hot
liquid. They will almost always shatter.
But if you heat or cool them gradually there is no risk -
absolutely NONE - that they will shatter. But they can give you
a nasty burn.
People have been preserving fruit in glass jars for many many
years, and the only accidents have been from not doing things the
proper way.

Any acid will help, the stronger the better, but it will change
the flavour, and sometimes spoil it.
The best way to keep out the yeasts and moulds is to kill them
with heat and then seal the containers.
Otherwise, you should make only enough to use in one day, and
keep it covered in the refrigerator.
