Sounds like iRedMail is what you need then :)

It basically builds a email server on a clean Linux installation using your
distribution's own package repositories :)  The current version even lets you
use Outlook in ActiveSync mode as well as any ActiveSync capable mobile devices
for email, contacts and calendaring :)
