The primary reason for running the cold water while you use your
disposal, besides helping to flush the waste through the system, is to
provide adequate cooling to the enclosed motor. If you were to not use any
water or use hot water, you might run the risk of burning out your unit.
Baking soda or citrus peels are good solutions to eliminating odors from
your disposal unit, but the best solution is to eliminate the cause of the
odors which, of course, is the microbial activity in the decaying material
that remains behind. Other solutions which would also have this effect would
be to flush some vinegar or some clorine bleach (diluted, of course) through
your system.
