22 oz cubed pork
2.6 oz butter
9 oz mushrooms
2.2 lb potatoes
1.1 lb string beans
3 lg carrots
2 leeks
6 tomatoes
1 c stock
1/2 c cream
salt, pepper, nutmeg,
vinegar, fresh parsley,
celery, chives
Rub salt and pepper on the meat and fry in the hot butter. Brush and
slice the mushrooms and add to the meat. Simmer for a few minutes
and turn off the heat. Peel and thinly slice the potatoes, carrots,
and leeks. Wash and slice the tomatoes. String the beans and break
them in half. Finely chop the parsley, chives and celery.
Butter an oven dish and put in a layer of potatoes and carrots.
Sprinkle with salt, pepper, chopped spices and vinegar. Then a layer
of leeks (sprinkle with salt, pepper, spices and vinegar), a layer
of meat and mushrooms (again sprinkle with salt and pepper, spices
and vinegar) and top with a layer of beans and tomatoes.
Mix the cream in with the stock and pour that over the top. Cover
the dish with foil and bake in a preheated oven for two hours at
250 F/125 C.
