Yield: 4 servings
4 ea Chicken breasts
1 bn Fresh spinach
1 lb Feta chesse
4 ea Phillo dough sheets
2 T Dill weed
1 T Onion, chopped
Salt and Pepper to taste
1 c Beurre blanc sauce w/dill
: Place chicken breaasts on roasting pan, broill at high heat
until golded brown and pink in the middle. Remove chicken to cutting
board and de-bone. Blanch fresh spinach in boiling salted water and
aside. Crumble 2/3 of the Feta cheese into a small bowl and mix with
parsely and dill and onion. Divide spinach into four parts, lay out
1/4 of spinach in a overlaping manor to produce a solid sheet, place
chickenn breast onto the center of the spinach and then pile on 1/4
of the cheese mixture; Wrap chicken/cheese with the spinach sheet.
Take one sheet of Phillo dough and fold in all points to the center,
place wrapped chicken bundle in the center of the dough and pull up
the sides to form a "Beggars Purse" or a flowering top bundle and tie
off with a strand of green onion. Set on cookie sheet, spray on
vegtable/non-stick cooking spray, and bake at 350 deg. F until golden
brown; Set aside to cool.
Service: Place dill beurre blanc sauce onto plate and then place
bundle in center of sauce, arrange torn romane leaf lettuce salad
n
plate, and garnish with slices of lemon slices and cubed Feta
hesse
and a sprig of parseley a top of bundle.
