Title: Stern's Frozen Chocolate Raspberry Meringue Cake

Meringue place 6 egg whites into a large mixing bowl - reserve sift
and stir 1 cup icing sugar
1/4 cup cocoa - reserve beat egg whites until opaque slowly
beat in
3/4 cup granulated sugar and continue beating until stiff fold
in cocoa/icing mixture and then fold in 1/4 cup chopped semi-sweet
chocolate
spread meringue into 2 9" circles on cookie sheets lined with
parchment paper bake in a pre-heated 250 degree oven for two hours or
until meringues feels dry. cool. Meanwhile, line a 9" springform pan
with a round parchment paper soften 2 500 ml packages of Gelato
Fresco's chocolate marbel sorbet and smear into the pan cover well
and freeze. When meringues are cool, trim to fit into another 9"
springform. Put meringue in the bottom of pan remove sorbet "cake"
from the other springform and place over the meringue in the second
pan top with remaining merignue. Wrap well and freeze Serve with
raspberry or chocolate sauce and dust cake with icing sugar or cocoa.
