Title: Rum Truffles
Categories: Cookies
Yield: 4 servings
6 Squares (6 ounces)
Unsweetened chocolate
2 tb Butter
1 tb Heavy cream
6 tb Dark rum
2 Egg yolks
2 c Sifted confectioners
Sugar
Unsweetened cocoa (not
Cocoa
Mix)
1. Melt the chocolate and butter in a heavy saucepan over low heat,
stirring constantly. Remove from the heat. 2. Add the cream and rum
and blend well. 3. Add the egg yolks and blend well. 4. Add the
confectioners' sugar and stir. Knead with your hands until the
mixture is smooth. Refrigerate for half an hour. 5. Dust your hands
with confectioners' sugar. Shape the dough into balls about 1 inch in
diameter. Roll each ball in a small bowl of cocoa. Refrigerate until
1/2 hour before serving. The truffles taste best at room temperature.
Makes about 2 1/2 dozen candies
