      Title: Cooking Bag Microwave Whole Chicken
 Categories: Chicken, Microwave, Low-cal
      Yield: 1 servings
 
      1    Whole chicken
           Papa Dash Seasoning  OR
           AHA Seasoning
      1    Cooking bag
 
  Remove all skin and fat from chicken.  Remove wing tips. Rub entire
  bird with seasoning, adding a little extra paprika for color. Put
  microwave safe plate, bottom up in cooking bag (this will allow any
  fat from the bird to drain away from the bird into the bottom of the
  cooking bag), put the bird on the plate, put bird and plate in
  cooking bag, fold end and tuck under plate. Punch a couple of holes
  for venting in the cooking bag. Put in microwave and cook for 12
  minutes on high, rotate twice. Use as roast chicken or remove meat
  from bones and use in any recipe calling for cooked chicken.  With

      Title: Orange Rice
 Categories: Side dish, Diabetic
      Yield: 6 servings
 
      1 c  Uncooked rice
      1 c  Water
      1 c  Orange juice
      1 ts Reduced calorie margarine.
      1 ds Salt
      1 tb Freshly grated orange rind
    1/2 c  Fresh orange sections
           - seeded
 
   In a 2-quart microwave safe casserole, combine the rice, water,
  orange juice, margarine and salt. Cover, microwave on HIGH for 5
  minutes.
  
   Stir in the orange rind. Turn the bowl 1/4 turn. Micro- wave on HIGH
  an additional 10 minutes, turning the bowl after 5 minutes. Do NOT
  uncover the bowl. Allow to set, covered for an additional 10 minutes,
  or until all the liquids have been absorbed.
  
   Immediately before serving, fluff with a fork, add orange sections,
  and mix gently.
  
  NOTE:makes about 6 (100 calorie) servings.
