The subject you are looking for is called "Population Genetics".
A google search on that term gives you lots of course web
pages with a lot of information.
For example, try "Mathematical methods in population genetics" at
http://pespmc1.vub.ac.be/MATHMPG.html
A classic book, albeit a bit old now, is JFCrow and M Kimura, "An
introduction to population genetics theory", Harper Row, 1970
